Freezing the dough brieﬂy before baking helps it maintain its shape. You want to shock the crust, sort of like a hot-to-cold dunking at a Russian spa. Water will evaporate and puﬀ out the fat/ﬂour matrix you’ve developed in the dough, leaving flakes and a decorative edge with near-perfect military posture. When the oven is ready, retrieve the dough from the freezer. Dock the bottom and sides with your fork by pressing the tines into the dough and twisting just a little. These holes will let steam and air escape, which will keep the dough from billowing up.
6. Unfold the dough over the pie dish, tuck it gently into the corners of the dish, and trim the edge so it hangs only 1 inch off the rim of the plate. To transfer the dough to the pie plate, slide a bench scraper underneath it to unstick it from the rolling surface. Then slide the bench scraper as far as you can beneath an edge of the dough and quickly, conﬁdently (fake it until you make it) fold the dough in half. Fold it again. Now your dough is in quarters, with the middle of the dough conveniently folded into a point.
If you baked your galette on parchment paper, you can remove the paper by letting the galette cool on the baking sheet for 20 minutes. Then transfer the galette to a wire rack by grabbing the edges of the paper and carefully lifting it onto the rack. Hold the top of the galette gently and pull the parchment paper from beneath it, allowing the bottom to crisp and cool more quickly. Make sure it cools for at least an hour on the rack before serving. At serving time, gently slide the galette onto a plate or cutting board.
